
Super gooey chocolate caramel cookie dough pots
Cookie dough pots are great for the kiddies, and this super gooey chocolate caramel version takes some beating. You can try other sweets instead of Rolo, whether Smarties, chunks of Mars or Snickers, M&Ms or Maltesers – and they can have fun by coming in at the last minute and doing the final task of pushing the sweets into the mix!

Ingredients
- 3½ ounces / 100g plain flour
- ¼ teaspoon of bicarbonate of soda
- ¼ teaspoon of salt
- 2 ounces / 60g coconut oil
- 1¾ ounces / 50g light soft brown sugar
- 1 large egg
- ½ teaspoon of vanilla
- 3½ ounces / 100g milk chocolate (I used Cadbury’s)
- 20 Rolo sweets (or similar chocolate caramels).
Method
Preheat the oven to 180°C / 356°F (160°C / 320°F fan).
Sieve the flour, bicarb and salt into a small bowl.
In a freestanding mixer with the paddle attachment, beat the oil and sugar until creamy.
Add the egg and vanilla and continue to beat until mixed.
Add the flour mixture and beat until just combined.
Fold in the chocolate and then divide the mixture equally between 4 ramekins.
Dot 5 Rolo sweets into each and then push them down with the tip of your finger so you can just see the top peeking out!
Cook in the oven for 12 minutes.
Remove, allow to cool for 5 minutes and eat with a spoon and a dollop of vanilla ice cream.
