Speedy Orzo Bolognese

This tasty little number is ideal for when you need something easy in a hurry. Although the list of ingredients looks long, there’s just a quick blitz in the processor for the veg and then everything into the saucepan, including the pasta. Job done!

Ingredients

  • 1 tablespoon of olive oil
  • 1 onion
  • 1 carrot
  • 1 stick of celery
  • 3 garlic cloves
  • 1lb 1½ ounces / 500g minced beef
  • 1 teaspoon of  oregano
  • 1 tablespoon of tomato purée
  • 1 tin chopped tomatoes
  • 21 fluid ounces / 600ml beef stock
  • 9½ ounces / 270g orzo
  • grated Parmesan, to serve

Method

Blitz the onion, carrot, celery and garlic cloves in a food processor.

Heat the oil in a large pan, add the vegetables and cook for 10 minutes until soft.

Add the mince, break up and combine with the vegetables and brown for about five minutes.

Add the oregano, tomato purée, chopped tomatoes and beef stock with a good pinch of seasoning, stir and bring to the boil.

Reduce to a simmer, add the orzo and cook for 10 minutes, stirring constantly to ensure the orzo doesn’t stick.

Serve with parmesan.
