S’Mores NaughtyStack

The current food fads seem to be for things that only an Olympic athlete or Arnie could polish off and the S’mores NaughtyStack is right up there with the best of them . The very idea of these insane food indulgences excites us, but few human beings could ever actually meet the challenge. A bit like going into space. The NaughtyStack is something of a favourite in our house and while we have a few varieties and they’re all awesome, I can tell you that they’re not here purely for show! While it’s not to be recommended as part of a calorie controlled diet (!) I can attest to the fact that as an almighty dessert treat, it just can’t be beaten. It looks amazing, tastes amazing and everyone will be doing their best to empty their plate!

Ingredients

Hotcakes
  • 1 ounce / 30g unsalted butter
  • 8 ounces / 225g plain flour
  • 2 eggs
  • 10½ fluid ounces / 300ml whole milk
  • 1 teaspoon of caster sugar
  • 1 tablespoon of baking powder
  • pinch of salt
Toppings
  • 2 tubs of Fluff marshmallow
  • 12 digestive biscuits
  • Belgian chocolate sauce, heated
  • 12 Cadbury’s chocolate fingers

Method

Melt the butter in a small saucepan and allow to cool.

Place all of the hotcake ingredients (including the melted butter) into a food processor and blitz until you have your batter.

Heat a large frying pan on a medium heat and add a knob of unsalted butter.  Using a quarter cup measure, dollop some batter into the middle of the pan and once the hotcake starts bubbling on the surface and a skin begins to form, flip over.

Allow to cook for another 20-30 seconds or so before transferring to a plate.  Each pancake should take no more than 1-2 two minutes in total and you’ll need to constantly add more butter to the pan.

To create your S’Mores NaughtyStack, take a hotcake and spread with a generous dollop of Fluff.

Crumble 1 digestive biscuit in your hands and sprinkle over the Fluff hotcake, before pouring over some chocolate sauce.

Do this another 5 times to create your stack of 6 hotcakes.  Finally, add 6 chocolate fingers into your tower.

This recipe is enough for two S’Mores NaughtyStacks!

Tips

It’s much easier to spread the Fluff on your hotcake before you stack, so you may wish to have a separate plate purely for marshmallow application!

Trivia

The hotcake or pancake or crêpe has many different names and many subtle regional variations but consists essentially of a batter of eggs, milk, flour, and butter which is fried in a pan. In the UK, these are generally unleavened (no raising agent) while the hallmark of the North American variety is baking powder, as here.
