
This is a simple and elegant way to add some sizzle to a joint of roast beef, the secret ingredient being the Worcestershire sauce which itself has a secret ingredient that nobody outside Lea & Perrins knows, although the word is that the original 19th century list of ingredients was found in a skip outside the factory in Worcester in 2009. All we need to know is this will give your roast a great twist.

Ingredients
- 2lbs 3 ounces / 1kg silverside beef joint
- 2 tablespoons of Worcestershire sauce
- 2 garlic cloves, minced
Method
Pre-heat the oven to 200°C / 392°F (180°C / 356°F fan).
In a jug, combine the Worcestershire sauce and garlic with some seasoning.
Put the beef into a tight fitting roasting tray and pour over the sauce and then rub it into the beef (I use latex gloves).
Cook in the oven for 1 hour and 15 minutes.
Remove, cover in foil and leave to rest for 10 minutes.
Slice and drizzle with any leftover sauce.
