Pizza waffles

Despite the name, these pizza waffles are a wholly British affair!  Not to be mistaken with the waffle made from batter and enjoyed as a dessert, the good old Bird’s Eye frozen potato waffle is a treat most children in the UK will recognise!  My mother used to put them into the toaster which is probably the reason so many of our toasters died an early death!  I still consider potato waffles something of a comfort food and over the years have tried them with just about every possible combination of savoury ingredients (if you want something simple and delicious, they’re great dipped in ketchup, just like a huge, lattice chip!)

This is the recipe I turn to most frequently and in just ten minutes you can have a delicious snack.  It’s also a favourite with the children.  It works particularly well with a good, strong and mature cheddar although if you want something more akin to a pizza of course you can use mozzarella.

Ingredients

  • 4 frozen potato waffles
  • 3½ ounces / 100g cheddar cheese, sliced
  • 1 ounce / 25g chorizo, sliced and quartered

Method

Grill the waffles according to packet instructions.  The cheese will make them soft so I always grill them so that they are extra crispy!

While you’re doing this, dry fry the chorizo in a frying pan.

Layer the cooked waffles with the cheese and return to the grill.

Once the cheese has melted, scatter the chorizo over the top and transfer to a plate using a fish slice (this way you capture all that lovely melted cheese that’s slipped through the lattice holes!)
