Like all good hypocrites, I spend much of my time spooning one decadent morsel after another into my mouth, while doing my best to ensure my children eat healthily! I’d wanted to use up some leftover fruit in the fridge and struck upon this simple recipe that allowed me to do just that, while giving my two ankle biters a little treat. In truth, you could use any number of fruits but this is what I had at my disposal and was enough to feed two hungry children. Feel free to experiment! You could very easily serve this in a bowl, but for effect I served it in a clear glass and used my own homemade Good Granola recipe (found on this website).Print this Recipe
- 5¼ ounces / 150g strawberries, diced
- 3½ ounces / 100g blueberries
- 1 nectarine, diced
- 5¼ fluid ounces / 150ml Greek yoghurt
- 1 ounce / 30g Good granola
Take two clear glasses and divide the diced strawberries between them.
Layer with the blueberries, followed by the nectarine.
Pour the yoghurt over the fruit and then sprinkle the granola on top.
Voila, happy children!
Greek yoghurt, otherwise known as strained yoghurt or labneh (in Arabic), has been strained to remove the whey, which makes it thicker. Although known in the USA and UK as Greek yoghurt it is in fact widely used throughout the Levantine, Eastern Mediterranean, Near Eastern, Central Asian, and South Asian regions. Strained yoghurt has increased in popularity in the west because the process removes lactose, making it lower in sugar than unstrained yoghurt while preserving the distinctive sour taste.Print this Recipe
