
Cheat’s chicken chow mein
Chicken chow mein is probably the most popular stir fry noodles dish in the world. You may be surprised to learn that it is quicker to cook it yourself at home than to order from your local Chinese takeaway. While the classic version is packed with more vegetables than here, the secret to the flavour is, of course, in the sauce and this cheat’s version which uses fewer ingredients and is quick and easy to make will give you all that great taste.

Ingredients
- 1 tablespoon of sesame oil
- 3 tablespoons of dark soy sauce
- 1 tablespoon of lime juice
- 2 skinless chicken breasts, cut into thin strips
- 3 nests of egg noodles
- 3 spring onions
- 1 tablespoon of groundnut oil
- thumb sized piece of ginger, finely sliced
- 2 cloves of garlic, finely sliced
- 5¼ ounces / 150g beansprouts
Method
Mix the sesame oil, soy sauce and lime juice in a small bowl and stir, before adding the chicken and leaving to marinate for a few minutes.
Cook the noodles according to packet instructions and once cooked drain and set aside.
Finely slice the spring onions, keeping the white stalks for your recipe and setting the sliced green leaves aside to dress.
Heat the oil in a large wok and add the white stalks of your spring onion, the ginger, garlic and beansprouts and stir fry for one minute.
Add your chicken with its marinade and stir fry for another couple of minutes before adding your noodles and some seasoning.
Toss everything together and stir fry for another couple of minutes.
Serve with the remainder of your spring onions as a garnish.
