
Baileys hot chocolate
I’m currently in the middle of writing a book on the best hot chocolates in London and this recipe for Baileys hot chocolate is inspired by one of my recent visits! The version I tried was made with milk chocolate and even with my liking of everything sweet, I found it a little rich for my tastes. So I wanted to try my own version using dark chocolate.
Unlike my Kahlua hot chocolate recipe which (for me, at least) works better with milk chocolate, I think the higher cocoa content just works better with Baileys. Hopefully you’ll agree!
Serves 2
Ingredients
- 3¾ ounces / 100g 70% dark chocolate
- 1¾ fluid ounces / 50ml double cream
- 3½ fluid ounces / 75ml Baileys Original Irish Cream
- 7 fluid ounces / 200ml whole milk
- ½ tablespoon of demerara sugar
Method
Put all of the ingredients in a small saucepan, breaking your chocolate into squares.
Heat until just starting to boil and then reduce to a good simmer.
Let it bubble away for 5 minutes, stirring regularly (I use a whisk).
Serve with toppings of your choice.
