This is a real grown up’s dessert and no mistake. Every spoonful is a cool, crumbly, creamy mouthful of heaven with a warming kick and a little added fun. It tastes even better than it looks and I guarantee you everyone will be coming back for seconds. This is meant to serve 4 people and works well if served in large wine or cocktail glasses. But it also makes a scrumptious super sundae for two!Print this Recipe
- 4¼ fluid ounces / 120ml whole milk
- 5¼ ounces / 150g dark chocolate chips
- 7 ounces / 200g bourbon biscuits
- 3 tablespoons of chocolate coated popping candy
- 1½ ounces / 40g icing sugar
- 16½ fluid ounces / 470ml whipped cream
- 2¾ fluid ounces / 80ml Baileys® Chocolate Luxe
Heat the milk in a microwave until hot and add the chocolate chips. Stir until the chocolate has melted and you have a thick chocolate sauce. Set aside to cool.
Put the biscuits in a bag and bash with the end of a rolling pin until you have a good mix of crumble and small pieces. Add the popping candy and mix together.
Put the icing sugar, whipped cream and Bailey’s® into a freestanding mixer with the whisk attachment and mix for 3-4 minutes until stiff peaks have formed.
Separate the cream mix into two portions. To one portion add the chocolate and mix with a metal spoon by hand until fully combined.
You’re now ready to make your mousses.
Build up layers in your 4 (or 2!) glasses, first with some biscuit, then some of the chocolate cream and then some of the sans chocolate cream.
Repeat the process, before finishing with a good sprinkling of biscuits on top!
